Whole 30 Day 9, Smoky Sweet Potato Chili

We got our last rain for a while yesterday, which made it the perfect day for chili! I know what you’re thinking, chili without beans? Let me remind you that traditional Texas chili doesn’t have beans, either. But chili full of sweet potatoes? That is definitely Whole 30!

Smoky Sweet Potato Chili

This was a perfect recipe for the end of the week, low effort and big on flavor. (It actually bordered on too spicy thinks to the poblano and cayenne pepper, so you may want to adjust the seasonings if you’re not fond of spicy food.) Brown your ground beef, add the spices, veggies, and tomatoes, and let it take care of itself in the slow cooker while you focus on other things. It made plenty for just the two of us, and I threw the rest in the freezer. It feels good to have a back up dinner on hand since I have a feeling I may be a little burnt out on cooking by the end of the month!

Usually we get take out about once a week to give ourselves a night off of cooking, which is of course a lot harder to do when you’re on the Whole 30. But, in case you haven’t heard, Chipotle has several Whole 30 approved lifestyle bowls. Keep that in mind as the month goes on, because we are all going to need a break now and then. And when you have the chance to put a meal in the freezer for later take it! Your future self will thank you.

I can’t say that this was one of those meals Jason and I will be putting on repeat after the Whole 30 is over, but it definitely did the job. Tomorrow we’re going to get fancy with Filet Mignon and smashed potatoes. See you then….
