Whole 30 Day 15, Garlic Butter Steak with Zoodles and Simple Salad

TGIF! It has been a busy week and I had a tough time rallying this morning when my alarm went off. In order to get my coffee, a walk, and a shower before I clock in at 8:00 a.m. I usually get up at 5:30. But today I hit the snooze and skipped my walk in favor of a little more shut eye. Given my less than energetic state today I could not have chosen a better dinner. These Garlic Butter Steak Bites by All The Healthy Things are so good, and probably the quickest dinner we have made this year!

Garlic Butter Steak Bites with Zoodles and Simple Salad

Since there is no marinade or lengthy prep involved, this is the kind of dinner you could easily stop by the store on your way home from work to pick up and still have dinner on the table at a reasonable time. We all need a few of those kind of meals in our wheelhouse. Jason gave them two thumbs up and likened the flavor to a shish kabob cooked inside.

I’ve seen this recipe on Pinterest where the zoodles are cooked in the same pan as the steak, it’s pretty popular keto fare these days. But believe it or not we were coming to the end of our ghee! Jason has been having eggs pretty much every morning, and between that and the mashed potatoes we had just enough left for the steak. We used my usual zoodle recipe of olive oil, garlic, salt, and pepper. And since the steak called for quite a bit of garlic I just stole a pinch out of that pile for the squash.

If you don’t already own a spiralizer they are pretty handy for low carb cooking. I have made myself zoodles while Jason and the boys had spaghetti on many a pasta night in our house. I like this one by OXO because it has the basic blades I need to turn veggies into thin bands or fettuccini style spirals.

I’m looking forward to the weekend and a chance to restock some of our basics. I’ll be making another batch of ghee, and hopefully some homemade mayonnaise. Jason wants to make tuna salad this week, and we skipped buying the Whole 30 approved mayo from Primal Kitchen in favor of making our own. What can I say, we clearly like spending time in the kitchen!
