Banana Nut Bread

Ingredients

  • 3 bananas medium
  • lemon juice
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs beaten
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350° and grease and flour a 9x5x3 loaf pan. Mash bananas and sprinkle with lemon juice, set aside.
  • In a separate bowl, cream butter and sugar. Add eggs and salt, beat well. Add flour and baking soda, beat well. Add vanilla, pecans, and mashed bananas. Mix well, scraping sides of bowl and beater to make sure the bananas are incorporated throughout.
  • Pour batter into prepared loaf pan and bake for 45-50 minutes, or until toothpick inserted into center comes out with just a few crumbs attached. Do not over bake.
  • Cool in pan for 10 minutes then transfer to a wire rack and cool completely before slicing.

Notes

*You can omit nuts or substitute with chocolate chips if you desire.
