Lisa's Cabbage Salad

Ingredients

  • 1/2 head red cabbage chopped
  • 1/2 head green cabbage chopped
  • 1 red bell pepper diced
  • 1 box frozen corn
  • 1 carrot shredded
  • 1 jalepeno seeded and diced
  • 1/4 cup cilantro minced
  • 4 tbsp olive oil
  • 6 tbsp red wine vinegar
  • 1 lemon juiced
  • 2 tsp ground cumin
  • 2 cloves garlic pressed
  • freshly ground black pepper to taste
  • kosher salt to taste

Instructions

  • Whisk together olive oil, vinegar, lemon juice, cumin, garlic, salt, and pepper in small bowl.
  • Place chopped cabbage, onions, bell pepper, corn, carrot, jalepeno, and cilantro in large bowl. Pour dressing over salad and toss well to combine.
  • Let stand at room temperature for at least two hours before serving.
